Baldur’s Gate 3 allows you to choose a background for any character you create. These backgrounds give Proficiency in two skills; these skills are naturally things that a character with the chosen background would be familiar with. For example, a Sage has Proficiency in Arcana and History.

The background you choose can be used as a guide for your roleplaying as well — some decisions you make will give your character Inspiration if you act in accordance with your character’s Background. The game’s Origin Characters also have one of the game’s 11 generic backgrounds in addition to their unique backstory.
